Uh ... I'm assuming you meant that you Repackaged your other ships and then carried them in the Iteron, rather than Reprocessing them. If you Reprocess them you turn them into minerals. Repackaging them makes them smaller and allows you to transport them in another ship.
Each Faction has their own scheme when it comes to industrials and they don't follow the same progression.
Skill levels for Faction Industrial do two things:
1) Increase your cargo capacity for whichever one you've got.
2) Qualify you for a better ship.
Gallente have 5 Iterons, one for each level of the skill. Each step up the ladder gets you a bigger cargo hold. They have varying numbers of low slots for cargo expanders. The V is pretty much the best Industrial in the game - but you have to train Level V of the skill to get into it.
Amarr have 2 ships, the Sigil a smaller faster one and the Bestower a larger slower one - but you can qualify for both of them with Amarr Industrial I so each level trained simply increases your cargo hold for the same two ships. The Bestower has decent capacity but tops out fairly low. Both have a large number 5/4 of low slots for cargo expanders.
Caldari have two ships the Badger being the entry level ship and the Badger II you can get at Level III. The Badger II has a decent sized cargo hold but has few slots for cargo expanders.
The Minmatar have 3, the Wraith, Horder and Mammoth. The Mammoth takes Level IV to get into but has a very good cargo capacity and Level IV isn't that hard to reach.
It's probably not worth putting rigs on the lower level Industrials. For the cost of the rigs you could probably buy one of the better ships.
Each faction, having at least two ships, gives you an entry level ship and then their top of the line so you've got an easy one to get into starting out and then at least one better one to progress to.
For the average pilot - it doesn't matter that much if you just want something to haul your stuff around, you'll probably be fine with any of them. If you're more serious - then you might want to think about getting either a Mammoth (about 27,000m3 with T1 rigs & full ECH II's) or a Iteron V (about 38,000m3 with T1 rigs & full ECH II's).
You can fit them different ways for different purposes.
Long Distance Hauler - Lots of Medium Shield Extenders and a Inv. in the mids, ECH II's in the lows.
AFK Miner - MLU's in the lows, a Mining Laser II and an 10MN AB & Ore scanner in the mids.
Belt Hauler - ECH II's in the highs and a 10MN AB to get around the belts (which is important in mining mission space if you have to fly in from the beacon).
You can even fit them out as cheaper versions of Transports.
Fit a cloak and MWD and some Inertial Dampeners and you can try Blockade Running.
Reinforced Bulkheads, a DCII, Shield Expanders and Shield Expander Rigs with an Invul. for a 19,000 EHP Bestower doing a cheep imitation of a Deep Space Transport.
You can even fit them for combat if you look up the fittings for a Battle Badger.
All in all, the Industrials are simply to useful not to have one. Each has it's own characteristics qualifications and cost so there are plenty to choose from and anybody can own one. All it takes is Faction Frigate III and Faction Industrial I and you've got something to haul your stuff around with.
